National Truffle Day

National Truffle Day, observed on May 2nd, celebrates truffles in both senses of the word: the rich, round chocolate confections and the rare, aromatic underground fungi prized by chefs worldwide. Chocolate truffles, made from a ganache center of chocolate and cream rolled into balls and coated in cocoa powder, chocolate, or nuts, are said to have been invented in France in the 1920s, reportedly by chocolatier Louis Dufour, who named them for their resemblance to the irregular, earthy appearance of the fungal truffles that grow underground near the roots of certain trees. Culinary truffles themselves have been prized since antiquity, valued for their intense, distinctive aroma and flavor, and remain among the most expensive food ingredients in the world due to the difficulty of cultivating them, with foragers historically relying on trained pigs or dogs to sniff them out beneath the soil. The finest varieties, including the white Alba truffle from Italy and the black Périgord truffle from France, can sell for thousands of dollars per pound, particularly during peak harvest seasons in autumn and winter. On this day, food lovers celebrate either by indulging in chocolate truffles or seeking out dishes featuring the rare fungal delicacy, depending on their taste and budget.
