National Taffy Day

National Taffy Day, observed on May 23rd, celebrates taffy, a chewy candy traditionally made by boiling a mixture of sugar, butter, and flavoring to a specific temperature before repeatedly pulling and stretching the cooling mixture, a process that incorporates air into the candy and develops its distinctive light, chewy texture. The physical pulling process, historically performed by hand and later mechanized with specialized taffy-pulling machines, is essential to the candy's characteristic texture, since the mixture would otherwise harden into a dense, glassy consistency similar to hard candy rather than achieving taffy's signature chewiness. Taffy became particularly associated with American seaside boardwalk culture in the late 19th century, especially through "salt water taffy," a name most closely tied to Atlantic City, New Jersey, according to popular but historically disputed origin legends suggesting the candy's name arose after a shop's taffy supply was accidentally soaked by ocean water during a storm, though the candy doesn't typically contain any meaningful amount of actual seawater and the salty association is now understood to be largely a marketing legend rather than a literal product description. Taffy-pulling also became a popular 19th and early 20th century American social activity, particularly among young people at gatherings sometimes explicitly called "taffy pulls," where participants would help stretch the warm candy by hand.
