National Sacher Torte Day

National Sacher Torte Day, observed on December 5th, celebrates the famous Viennese chocolate cake consisting of two dense chocolate sponge layers separated by a thin layer of apricot jam and coated entirely in a smooth, dark chocolate glaze, traditionally served with a dollop of unsweetened whipped cream. The cake was created in 1832 by Franz Sacher, then a sixteen-year-old apprentice pastry chef, who invented the recipe under considerable pressure after being tasked with creating a special dessert for Austrian Chancellor Klemens von Metternich when the head chef fell ill. The torte's precise original recipe remained a closely guarded secret for generations, and it eventually became the subject of a lengthy and famous legal dispute between Vienna's Hotel Sacher, founded by Franz's son, and the Demel bakery, both of which claimed the right to call their version the "original" Sacher torte, a dispute finally settled in the 1960s allowing Hotel Sacher exclusive rights to the "Original Sacher-Torte" trademark. The cake remains one of Austria's most celebrated culinary exports and a defining symbol of Viennese coffeehouse culture, which itself holds UNESCO Intangible Cultural Heritage status recognizing its significant role in Austrian social and cultural life. Sacher torte is traditionally enjoyed with a cup of coffee in the leisurely, unhurried style characteristic of Vienna's historic coffeehouse tradition.
