National Pistachio Day

National Pistachio Day, observed February 26th, celebrates one of the world's oldest cultivated nut trees. Pistachios are native to the Middle East and Central Asia, particularly the region spanning modern-day Iran, and archaeological evidence suggests humans have gathered and eaten pistachios for thousands of years, making them among the earliest flowering nut trees cultivated by ancient civilizations. A distinctive trait of ripe pistachios is that their shells naturally split open along a seam as the nut matures, sometimes nicknamed the pistachio's "smile," making the nut unusually easy to open by hand compared to many other tree nuts that require cracking tools. Pistachios were historically prized as a luxury food in Persian and Mediterranean cultures, associated with hospitality and often served to honored guests. The United States, and California in particular, became a major global pistachio producer starting in the 1970s, after decades of agricultural research to adapt the tree to California's climate, and the state now rivals Iran as one of the world's top pistachio-producing regions. Pistachios are used in both sweet and savory dishes worldwide, from Middle Eastern baklava and Italian gelato to simply being enjoyed roasted and salted as a snack. On National Pistachio Day, people celebrate by snacking on pistachios or cooking with them in a favorite recipe.
