National Fried Chicken Day, observed on July 6th, celebrates crispy, seasoned fried chicken, a dish with culinary roots spanning multiple continents and cultures. While various fried chicken traditions existed independently, including Scottish frying techniques and West African seasoned and fried poultry preparations, American Southern fried chicken developed as these culinary traditions merged, particularly through the influence of enslaved and later free Black cooks in the American South, who developed and refined techniques for seasoning, breading, and frying chicken that became foundational to Southern and soul food cuisine. Fried chicken carried complicated cultural associations for much of American history, having been unfairly weaponized as a racist stereotype targeting Black Americans in demeaning post-Civil War era caricatures, even as Black cooks and entrepreneurs, including hotel and restaurant owners, played pioneering roles in popularizing and commercializing the dish. Fried chicken achieved massive nationwide commercial success in the 20th century through chains including Kentucky Fried Chicken, founded by Colonel Harland Sanders, who developed his famous secret blend of herbs and spices and popularized pressure-frying techniques that reduced cooking time while preserving moisture. Regional and international variations continue to flourish today, including Nashville hot chicken, Korean double-fried chicken, and Japanese karaage, each reflecting distinct local seasoning and preparation traditions.
