Despite the name, the dish's true origin is genuinely disputed between France and Belgium, with Belgian food historians pointing to a long local tradition of frying potatoes dating back to the late 17th century in the Meuse Valley region, while acknowledging that American and other English-speaking soldiers stationed in French-speaking Belgium during World War I likely popularized the "French fries" name after encountering the dish in Francophone Belgian communities. The technique of double-frying, cooking the potatoes first at a lower temperature to cook the interior, then again at a higher temperature to crisp the exterior, became a hallmark of high-quality French fry preparation, a method particularly refined and celebrated in Belgian frying culture, where fries are traditionally cooked in beef tallow for distinctive flavor and served with a wide variety of dipping sauces beyond simple ketchup.
