National Cabbage Day

National Cabbage Day, observed February 17th, celebrates one of the world's oldest and most widely cultivated vegetables. Wild cabbage is native to coastal areas of Europe, and its cultivation dates back to ancient Greek and Roman times, with early varieties looking quite different from the tightly headed cabbages common today, since selective breeding over centuries produced the dense, round heads now familiar in grocery stores. Cabbage's affordability, long storage life, and cold tolerance made it a dietary staple in many cold-climate cultures throughout history, particularly across Northern and Eastern Europe, where it remains central to iconic preserved dishes like German sauerkraut and, via a related brassica preparation, Korean kimchi, both of which use fermentation to preserve the vegetable and develop distinctive tangy flavors while boosting its nutritional profile with beneficial bacteria. Cabbage is also nutritionally dense for its low calorie count, providing significant vitamin C and vitamin K, and it can be prepared an enormous number of ways, from raw slaws and pickles to braised, roasted, stuffed, or stir-fried preparations found across global cuisines. On National Cabbage Day, people celebrate by cooking with cabbage in any of its many forms, from a simple coleslaw to a more involved braised or fermented dish.
