Nachos were created in 1943 by Ignacio "Nacho" Anaya, a maitre d' at a restaurant in Piedras Negras, Mexico, near the Texas border, who improvised the dish for a group of American military wives by topping fried tortilla chips with melted cheese and pickled jalapenos when the restaurant's kitchen was otherwise closed.
