National Cheese Fondue Day, observed on April 11th, celebrates the communal Swiss dish of melted cheese, traditionally a blend of Gruyère and Emmental, combined with white wine, garlic, and a touch of cornstarch or flour to create a smooth, dippable consistency, served warm in a shared pot known as a caquelon. Fondue originated in the mountainous regions of Switzerland, where rural households historically needed ways to use up hardened cheese and stale bread during long winters when fresh food was scarce, though its transformation into the dish recognized today, and its associated communal ritual of dipping bread cubes on long forks, developed more specifically in the 18th and 19th centuries. The Swiss Cheese Union heavily promoted fondue as a symbol of Swiss national identity and unity during the 20th century, particularly during the 1930s, helping cement its status as the country's unofficial national dish. Fondue experienced a significant surge in popularity in the United States and Europe during the 1960s and 1970s, becoming a fixture of dinner party culture alongside dedicated fondue pot sets, before falling somewhat out of fashion and later experiencing periodic revivals.
